Wash the kovakkai with enough water and cut it into thin slices vertically or circularly as you like. Cut the edges and discard them.
In Medium Flame, Heat a pan and add 2 tbsp of oil, 1/2tsp mustard urad dal, 1 tsp of cumin seeds and 2 sprigs of Curry leaves. Once the mustard seeds hgets popped out, add the kovakkai / ivy gourd slices and mix well.
Add 2 tsp of chili powder, 1/4 tsp of Turmeric powder, and salt to taste. Mix well and cook for 3 minutes
Sprinkle 1 tbsp of water, Mix well. Cook for 7 minutes by covering with the lid.
Cook for 5 more minutes until the moisture content goes away.
