Mutton Ghee Roast is a dry mutton recipe with spicy, tangy, and juicy mutton pieces. It’s a complete dry recipe that you can have with Idly or Dosa or Roti or Parotta or Plain Steamed rice or Biriyani.

MUTTON GHEE ROAST
Ingredients
- 500 grams Boneless mutton pieces
- 1/2 cup Chopped shallots You can use Big onion also
- 1 no Small size tomato
- 1/4 tsp Turmeric powder
- 1 tsp Garam Masala Check the recipe for INDIAN GARAM MASALA HOMEMADE
- 1½ tbsp Chili powder Adjust adding chilli powder upto your spicy level.
- 1/2 tsp Kashmiri chilli powder
- 1 tsp Gingerly oil
- 2 tbsp Pure Ghee
- 1/4 tsp Mustard seeds
- 1 tsp pepper powder
- 1/4 tsp Urad dal
- 1 tsp Cumin seeds
- 1 inch Ginger chopped
- 5 nos Chopped Garlic cloves
- 2 sprigs Curry leaves
- 1/2 hand full of chopped coriander leaves
- Salt to taste
Instructions
Pre preparation :
- Here, I have used Boneless Mutton pieces. Wash the 500 grams of mutton pieces with enough water and pressure cook it with 1 cup of water, and 1/2 tsp of salt for 4- 5 whistles. and keep it aside.
Method :
- In a Medium Flame, Heat a wide pan, add gingerly oil, ghee, mustard seeds, cumin seeds, green chilies, and curry leaves, and saute it.
- Add chopped shallots, Chopped Garlic, and Chopped Ginger and cook till the raw smell goes away. Then, add the chopped tomatoes and cook till it gets mushy.
- Now, add the turmeric powder garam masala ( INDIAN GARAM MASALA HOMEMADE), and chili powder with salt to taste and give a mix.
- Add the cooked mutton pieces with little mutton water and mix well and cook for 5- 8 minutes until the masala gets dry. Add fresh pepper powder and mix well.
- Finally, add chopped coriander leaves, and squeeze half a lemon juice. Turn off the flame and add a 1/2 tsp of ghee and mix well.
- Yummy! Tangy, spicy Ghee Mutton Roast is ready to serve.

Step by step pictorial method to make Mutton Ghee Roast :
- Cut the Boneless mutton into small pieces. Wash the mutton pieces with enough water and pressure cook it with 1 cup of water, and 1/2 tsp of salt for 4- 5 whistles. and keep it aside.

- Add 5 nos of chopped garlic cloves and 1-inch ginger, 1/2 cup chopped shallots and cook till the raw smell goes away. Then, add the chopped tomatoes and cook till it gets mushy.
- Now, add the 1/4 tsp turmeric powder, 1 tsp garam masala INDIAN GARAM MASALA HOMEMADE, and 1 tbsp chili powder with salt to taste and give a mix.
- Add the 500 grams of cooked mutton pieces with little ( 1/2 cup) mutton stock and mix well and cook for 5-8 minutes.
- Once all the water gets evaporated , add 1 tsp fresh pepper powder (adjust upto your spice lever) and mix well.
Finally, add chopped coriander leaves and add half lemon juice. Turn off the flame and add a 1/2 tsp of ghee (optional) and mix well.
Yummy! Spicy Ghee Mutton Roast is ready to serve. serve it with Plain steamed Rice or Idly or Dosa or Parotta or Roti.
