Avarakkai Poriyal / Broad beans stir fry – Avaraikkai is the most popular and oldest vegetable in the world. Other names of avarakkai are Flat beans, Indian beans, and Field beans. vegeterian side dish.
Avarakkai Poriyal / Broad beans stir fry is a simple vegetable stir fry recipe to make within a few minutes and It goes well with Boiled Plain Rice with sambar, or Rasam.

Avarakkai Poriyal / Broad beans stir fry
Ingredients
- 250 grams Broad Beans
- 1/2 tsp mustard seeds
- 1/2 tsp Urad dal
- 1 tsp Cumin seeds
- 2 nos Green chilies
- 1 strig curry leaves
- 1 tsp oil
- 1/2 Cup Water
Instructions
Preparation :
- First, Rinse the broad beans well with sufficient water. Now, we need to de-string the beans.
- Strings are more fibrous. It is not good to eat, which leads to digestive issues. So, it is important to remove the strings of the broad beans.
- To remove the string, partially cut one side of a tip end of a broad bean and pull the string below to the other end. Discard the end string. Do the same process to the other side too.
- Fresh young broad beans do not have strings, you just cut both ends for even cooking and chop the broad beans thinly in uniform size.
Method:
- Heat a pan, add oil, mustard seeds, urad dal, and cumin seeds. once the mustard gets craked and pops out. add the slit green chilies and curry leaves.Now, add the chopped broad beans, turmeric powder, and salt. Mix well and cook for a min.
- Add half of the water. Mix well and cook for about 5-7 min by covering it with a lid.
- Once all the water gets evaporated. Gently mix well. Broad beans stir fry is ready to serve.
