How to select a good Kovakkai / Ivy gourd?
Pick green color Kovakkai /Ivygouard indicates that they are grown perfect and can store for a long time period. The light green or pale yellow color which is a Riped Kovakkai is not good to make poriyal.

Kovakkai Poriyal / Ivy Gourd Fry
Ingredients
- 250 grams Kovakkai / Ivy Gourd
- 1/2 tsp Mustard seeds
- 1 tsp cumin seeds
- 1 tbsp cooking oil
- 1/4 tsp Turmeric powder
- 2 tsp chili powder
- 2 sprigs curry leaves
- salt to taste
Instructions
- Wash the kovakkai with enough water and cut it into thin slices vertically or circularly as you like. Cut the edges and discard them.
- In Medium Flame, Heat a pan and add 2 tbsp of oil, 1/2tsp mustard urad dal, 1 tsp of cumin seeds and 2 sprigs of Curry leaves. Once the mustard seeds hgets popped out, add the kovakkai / ivy gourd slices and mix well.
- Add 2 tsp of chili powder, 1/4 tsp of Turmeric powder, and salt to taste. Mix well and cook for 3 minutes
- Sprinkle 1 tbsp of water, Mix well. Cook for 7 minutes by covering with the lid.
- Cook for 5 more minutes until the moisture content goes away.
- Yummy! Kovakkai Poriyal / Ivy gourd fry is ready to serve with Plain steamed rice,VENDAIKKAI PULI KUZHAMBU / LADIES FINGER -TAMARIND CURRY , or SIMPLE DAL FRY or ,TRADITIONAL RASAM – (TAMIL NADU STYLE) or Mor kulambu.
