Do not wash the yam, before you peel, because the watery juice of yam may cause itching. you wash them the juice will flow in while cutting and cause itchiness. You can use gloves while cutting yam, I prefer to apply oil in your hands before cutting.

How do you cut a yam for frying Senai Kilangu fry recipe|Yam fry recipe?

First, peel the skin of the elephant foot yam / Senai Kilangu, then cut it into pieces. do not cut the yam in a bigger size, cut it into 1.5 inches in length and 1/2 inch thickness. and wash it 2- 3 times with enough water and turmeric powder and use it for your any fry recipe.

Ingredients
  

  • Yam- 3 cups chopped
  • Garlic -Garlic Paste -1 tsp
  • Coriander – few
  • Cinnamon- 1 inch
  • Cloves-2
  • Cardamom-2
  • Cumin seeds- 1tsp
  • Fennel seeds-1/2tsp
  • Oil-2 tbsp
  • Onion-1 finely chopped
  • Tomato -1 finely chopped
  • Chili powder- 1/2 tsp
  • Garam masala-1 tbsp
  • Curry leaves- few
  • GratedCoconut 1/2cup
  • Salt- req

Instructions
 

Yam Preparation

  • Peel the yam skin, chop it into small pieces, wash it twice 
  • Heat the pan to boil the chopped yam with enough water,1tsp of turmeric powder, salt req for about 10-15 min. (until the yam 80% cooked).
  • Once the yam gets cooked, smash few cooked yam pieces gently with the fingers (as shown in the picture below), allow it to cool. 
  • Heat a pan with enough oil for deep fry, add the cooked yam and fry it, and keep it aside. 

Masala Preparation

  • Take a blender, add grated coconut, fennel seeds, cinnamon, cloves, cardamom, blend it without adding water, keep it aside.

  • Take a pan to heat 1 tbsp of oil, mustard seeds, cumin seeds, curry leaves.
  • Add chopped onion, salt. cook well until onion turns glossy.
  • Then, add ginger-garlic paste and sauté well until the raw smell goes away.
  • Then, add the chopped tomato, sautés well in low flame for a few mins.
  • Add chilli powder, Gram masala, salt, mix well.
  • Now, add Fried yam pieces, mix well.
  • Add the ground coconut masala, mix, cook well for a few mins.
  • Turn off the flame, garnish it with coriander leaves.

Step 2: Heat the pan and bring the chopped yam pieces to boil the chopped yam with enough water,1tsp of turmeric powder, salt req. Cook for about 10-15 min. (until the yam 80% cooked). Drain the water and set aside.

Step 3: Once the yam gets cooked, smash few cooked yam pieces gently with the fingers (as shown in the picture below), allow it to cool. 

Step 4: Heat a pan with enough oil for deep fry.add the cooked yam and fry it for 2-3 min, and keep it aside.

Step 5: Take a blender, add grated coconut, fennel seeds, cinnamon, cloves, cardamom, blend it without adding water, keep it aside.

Step 6 :Take a pan to heat 1 tbsp of oil, mustard seeds, cumin seeds, curry leaves.Add chopped onion, salt. cook well until onion turns glossy.

Step 7:Then, add ginger-garlic paste and sauté well until the raw smell goes away.

Step 8: Then add the chopped tomato, sautés well in low flame for a few mins. Add chili powder, Gram masala, salt, mix well. 

Step 9: Now, add Fried yam pieces, mix well. let the masala gets coats nicely.

Step 10: Add the ground coconut masala, mix, cook well for a few mins.
